Chocolate Ice Cream (plant based)

Delicious, very creamy, and super quick chocolate ice cream with a hint of coffee.

If you don't like coffee, you can omit the coffee beans, but coffee is a great flavor booster.  Adding a coffee flavor to chocolate desserts can make them taste more chocolatey.

RECIPE

Makes about 500 ml

 

  • 3/4 cup coconut milk (the drinking kind)
  • 3/4 cup soy cream
  • 1/3 cup cocoa powder
  • about 1/2 cup light brown sugar
  • 1 tablespoon coarsely ground coffee beans
  • 50 grams chocolate (70%), chopped
  • pinch of salt
  • 1 tablespoon coffee-flavored liqueur (optional)

METHOD

  1. In a medium-size saucepan, mix coconut milk, cocoa powder, coffee, and sugar. Bring to boil over medium-high heat, then reduce the heat and simmer for about 5 minutes. Stir in the chopped chocolate and whisk until chocolate is melted and the mixture is smooth.
  2. Strain the mixture through a fine sieve to discard the coffee beans bits. 
  3. Mix in the soy cream, salt, and liqueur. 
  4. Refrigerate until the mixture is completely cold.
  5. Process in an ice cream machine following manufacturer instructions. 
  6. Transfer ice cream to a freezer container. Smooth the top with a spatula, then loosely cover the surface of the ice cream with wax paper and freeze until almost solid, about 2-4 hours.
