I took a week off from baking, just to let my oven rest a bit ☺️ I'm back on baking mode. I have a little crush on spelt lately, such a nice flavor. 🌾 I changed the blade in my lame finally and look at this beauty! 15% spelt, 75% hydration.
Sundays are for bread... Malted spelt and flax seeds.
The perfect lunch! Beetroot and peach salad with feta cheese and herbs, followed by sourdough flatbread topped with seasonal green veggies 🌿
Burrata salad with green veggies and herbs. It would be lovely with Parmesan flakes instead of Burrata, or no cheese at all, with a slice of toasted sourdough. I mixed green beans, asparagus, fava beans and a lot of fresh chopped herbs. Perfection! ǳ

Dumplings with egg whites, shiitake mushrooms, and pickled mustard greens. Added freshly milled spelt to the dough. YUM!
Rice and sweet corn cooked in dashi, roasted king bora radish, and spicy pickles. Simplicity at its best!
