Garlic Chilli "Everything Topping"

During one of our trips to Japan I bought this misterious garlicky mix. It was pack in a small bag with label writen only in Japanese. The bag was very small and my apetite big, I had to figure out quickly what is inside?!? 

I'm not sure I got it 100% right, but I'm fully satisfy with the outcome. 

I call this mix the "everything topping" because I sprinkle it almost on everything...I haven't tried with icecream, but I dont think it's a good idea anyway... wink

 

 

RECIPE

Makes 1 cup
  • 1 garlic head, peeled and minced
  • 1/3 cup Chinese dried chilies, finely chopped
  • 3 tbsp fresh ginger root, mined
  • 1 tbsp each white and black sesame seeds
  • 1/3 cup canola oil
  • 1/4 tsp salt
  • 2 tsp toasted sesame oil

METHOD

  1. Place all the ingredients in a deep frying pan and cook on low heat until garlic turns to lightly golden color. Do not fry until perfect golden brown color, because it will keep darkening even after take out from oil. Key point here is low and slow, if you rush and increase heat, garlic will easily burn and end up with bitter taste.
  2. Drain the chili garlic through a fine mesh strainer, preserving the oil It is a wonderful, aromatic condiment. Can be added to ramen soup, or simply tossed with noddles). Transfer the garlic mix to a paper towel lined baking sheet to drain the excess oil. You will need to replace the paper towel few times. 
  3. Cool the chili garlic completely and store in a airtight container.
