Fire Roasted Eggplant in Dashi

If you're a fan of eggplants like I am, you definitely don't want to miss out on this recipe. I took inspiration from the Japanese dish called "Eggplant Agebitashi," which translates to "deep-fried and soaked eggplant." However, instead of frying the eggplants, I chose to fire roast them to avoid excessive oil absorption, which can sometimes happen with frying. Once roasted, the eggplants are peeled and then soaked in a flavorful dashi-based sauce, allowing them to absorb all the delicious flavors. The result is a burst of flavors in every bite, making this dish simple yet incredibly delicious. Plus, the best part is that it can be prepared in under half an hour!
